Bech-Bailey is led by husband-and-wife team; Cornwall-born chef Jordan Bailey, and proud Dane, Majken Bech-Bailey.
Having worked in various Michelin-star restaurants across Europe, they developed a deep wealth of knowledge of all things hospitality. They set-up home in Ireland in early 2018 with one objective in-mind, to open a destination restaurant like no other.
In May 2019, AIMSIR was born – The fastest restaurant ever to be awarded 2-Michelin stars in the history of the UK and Republic of Ireland Guide. Needless to say, we used that knowledge we accumulated to very good use, and now we are wanting to share this with you. Wether it be consultation on an existing establishment, one in the making, or curating a memorable and show stopping event, Bech-Bailey has you covered.
Cornwall-born chef Jordan Bailey started his career at a family run restaurant called Rosewarne Manor, just a short drive from his family home, before heading on to his first Michelin star kitchen, The Elephant in Torquay. Lead by Chef-Owner Simon Hulstone, Jordan developed a bug for competitions and before he knew it he was competing in the worlds most prestigious, The Bocuse d ‘Or. Jordan went on to compete in many more national and International competitions before stepping up his career by landing a job at 2-Michelin star Restaurant Sat Bains. Here he worked with the worlds best ingredients, while also having access to home-grown produce, enabling him to honed his skills and understand what it takes to be successful. After working in the UK for the past 6 years, Jordan was looking to work abroad and managed to secure himself a position in the renowned Norwegian restaurant, Maaemo, of chef Esben Holmboe Bang in Oslo. Jordan progressed through the ranks quickly to Head Chef where he was responsible for developing and leading the team to perform at the highest level. A year later Maaemo was awarded the coveted 3-Michelin stars – A truly remarkable achievement.

Proud Dane Majken Bech-Bailey started her career in her home town of Naskov, working in a local high intensity cafe, waiting to see if she had been one of the lucky 10 candidate to be hand-picked and excepted in the highly-prized Copenhagen Business School – She was. Before enrolling, Majken was called upon for a favour by a friend to lend a hand at Henne Kirkeby Kro. Unknown to her, this restaurant was 2-Michelin star but Majken thrived in this environment and quickly became a very valuable member of the team. She developed a real passion for high-end service and it became a sort of an addiction. Striving to be the very best, so much so she turned down her position at the prestigious Business school. From there Majken moved to Oslo with Jordan and spent time in a series of restaurants renowned for their polished but comfortable service such as Bon Lio, ORO and 3-Michelin starred Maaemo, where she worked with Jordan. During her time in Oslo, Majken also helped a company open multiple business including a high-end and casual restaurant, retail shop and a hotel. Having gained valuable knowledge during this time, Majken was ready, along with her husband Jordan, to start their next chapter – AIMSIR. A hyper-seasonal and local restaurant where the beautiful dishes are elegantly lifted by the impeccable service implemented by Majken, General Manager of AIMSIR. With this combination It wasn’t a surprise when AIMSIR was awarded not one, but two Michelin stars, the fastest ever straight to two-star for any restaurant in the history of the Michelin Guide Great Britain and Ireland. Majken was quickly recognised by the wider CLIFF group, where AIMSIR was situated, for her keen eye for detail, work ethic, creative mind, positive attitude, and people skills, and was promoted to Director of Quality and Design, alongside being General Manager of AIMSIR. Majken went on to redesign the hotel rooms, restaurant, bar, a new spa complex, food pantry, and expand their retail offering.
